Brownie Heaven!

I realised, amidst a daydream of mine today, that is has been nearly a year since I posted my first ever brownie recipe. My last; just in time for Valentines day, was a gluten and dairy free (yet still decadent) classic chocolate brownie. I fancied changing it up this year (god that sounds weird!?) with the perfect combination of two of my favourite things, almond butter and dark chocolate!
So here we have it, a favourite with a twist-  Almond Butter Brownies…

What you need: 
Dry Ingredients-
  • 200g ground almonds
  • 80g rice flour
  • 2 tsp baking powder
  • 115g raw cocoa powder
  • 150g coconut sugar
  • 60g raw chocolate/ or dark chocolate, broken into chunks
Wet Ingredients-
  • 115g coconut oil
  • 200ml maple syrup
  • 100ml almond milk
  • 1/2 cup of apple sauce or 1/2 cup of mashed banana (I always seem to use banana as it’s what I normally happen to have in)
  • 3 Tbsp almond butter (I used Pip and Nut as it has a great consistency for this recipe)

Pre Bake

What to do:
*Preheat the oven to 170 °C
  • Mix all of the dry ingredients together, except the raw chocolate chunks. *Make sure you use a sieve to avoid any lumps!
  • Mix/blend all of the wet ingredients together until forming a smooth and creamy consistency.
  • Mix both sets of ingredients together.
  • Add the brownie mixture to a greased baking tray. Alternatively you can line the tray with baking paper.
  • Drop the 3 tbsp of almond butter on top of the mixture making sure to space them evenly over the mixture. Then use a stick or fork to swirl the almond butter throughout the chocolate. *FYI, the swirl will never look as pretty as all the pictures you see, don’t be hard on yourself! 
  • Sprinkle the chocolate chunks over the top and gently press them in to the mixture so they are poking half in and half out (I love my technical terms!?)
  • Bake for 20-25 mins or until a knife comes out clean on the poke test… another really technical term for you there!
  • Leave to cool for 20 mins- patience is a virtue! 
  • Cut and serve… serving sizes are completely subjective of course!

There you have it! Quick and easy to make and a lovely little treat for a cosy weekend in and a good old cuppa! Any nut butter, or chocolate lover would be CRAZY to not give these a go…
