Sopha’s Banana Bread

Hey gang, I’m back. It’s been such a long time since I’ve posted- I’m sorry!  I had plans to post all about my most recent holiday, but then life and a new job got in the way! Maybe you didn’t miss my weekly posts… but I have certainly missed writing them; so, I’m returning with this yummy Banana bread recipe.
I’ve posted pictures of this heavenly loaf on my insta, and I’ve had so many positive responses and requests for the recipe that I thought it was only right to get it posted up on here to share with even more of you!
Banana bread= a perfect excuse to not waste those overripe yellow things!
*gluten and dairy free
What you need-

(Block 1)
3 smashed overripe bananas
3 medium eggs
2 tbsp. honey
1 tbsp. maple syrup/agave nectar
¼ cup coconut oil
½ tsp. of bicarbonate of soda
½ tsp. of cinnamon (or a little more if you like the taste)
A drop of vanilla essence (not essential)

(Block 2)
1 ½ cups ground almonds
½ cup coconut flour
¼ cup chia seeds
What to do-
  • Preheat the oven to 160 degrees c
  • Grease a bread tin with coconut oil
  • Combine the first block of ingredients above and mix well
  • Add the second block of ingredients and combine till it forms a cake like batter
  • Top with nuts/seeds/banana/chocolate chips, get creative!
  • Bake for around 45-50 mins. Check towards the end by sticking in the tip of a knife and check it comes out clean= its cooked!


It’s super quick and easy, doesn’t require too much washing up, and fingers crossed tastes amazing! Eat on it’s own or top with whatever you fancy! I often use a bit of coconut yoghurt, a few berries and a drizzle of nut better! Enjoy x

    Glad your back Sophie, I’m thinking you may be a mind reader – earlier this morning I picked up two bunches of over ripe bananas & thought I’d like to find a healthy recipe!! Thank you & good luck with the new job x
