I haven’t vanished, everything is still ‘so far so good’. I had an obvious break from my laptop whilst I was away in Dubai; because quite frankly, laying out in the sun seemed a lot more appealing than typing away on here, plus I was following orders from the doctor to catch some vitamin D and to relax. Then it just so happened that since being back, everything got a little busy with seeing family, Easter, and eating all the dark chocolate in sight. Anyway, I’m back and I can’t wait to share more with you.
I posted pictures of these cookies a few weeks back on my Instagram, and tonnes of people wanted the recipe, so I thought, why not share it with you all? I also thought it was good timing for people to use some of the chocolate they had left over from easter, if you have any left that is? I have quite a bit of dark chocolate left from a ‘Green and Blacks’ egg I was given. I don’t really feel like eating it on it’s own, so I thought I could add it to my cookies instead!
Ingredients- 1 cup ground almonds 1/4 cup coconut flour 1/4 cup coconut sugar 1/2 cup shredded coconut 1/2 tsp baking powder 1/2 tsp baking soda 1 egg 1/4 cup melted coconut oil Dash of vanilla extract A bar of dark chocolate (chopped into pieces)
How to make them- (quite possibly the easiest recipe known to man!)
-Mix all the dry ingredients (the first 6) together in a bowl
-In a separate bowl whisk the egg with the vanilla extract, then add the melted coconut oil and mix
-Add the wet egg mixture to the dry, and stir, you may need to use your hands (LET’S GET MESSY!!)
-Make into 2 inch cookie shapes and place on a lined baking tray. Press the middle of the cookie down to flatten slightly
-Bake on 180 C for approx 10 mins or until golden brown
Enjoy! The challenge is to try NOT to eat them all at once! I dare ya!
Ok, these actually look like something from Bens Cookies but get this… they are SO much healthier!!
