Valentines Day, a day devoted to Love. Love for your family, your friends, your boyfriend, girlfriend, partner, or maybe just your LOVE for Brownies!
Apparently, according to studies, eating chocolate leads to higher levels of desire and sexual satisfaction. So if you needed an excuse to eat it, there’s one for you right there.
I swear everyone has a little sweet spot for chocolate. My mum, for example, claims she doesn’t really like chocolate, and would never order a chocolate dessert in a restaurant. Yet, almost every time we are out, she will always have a taste (and a half) of my brothers gooey, melt in the middle chocolate pudding if he orders one. GUILTY!
So I thought what better way to please everyone than to post a chocolatey, nutty Brownie recipe, albeit a slightly healthier version, yet with zero compromise on taste! Have a go at making these for your partner, or if you’re single, make Valentines Day; a day that is disgustingly filled with PDA and too many love hearts, slightly more bearable by devouring these tasty bites of goodness.
Ingredients- 1 cup Buckwheat Flour 1 cup Coconut Sugar ¾ cup + 2 tbsp Coconut Oil (or Butter if you aren’t going DF) ¾ cup Cocoa Powder /Raw cacao powder 3 Eggs Sprinkle of Salt 1 tsp Vanilla Extract A handful (or more) of Dark Chocolate Chips or whatever kind you fancy A handful of Pistachios, chopped + Cute extras for decoration and presentation * You can add an squeeze of Agave Nectar for a little extra sweetness
Preheat the oven to 180‘C and line a square baking tray with grease proof paper.
Grab your mixing bowl and stir together the flour, cacao powder and salt. Leave to the side.
In another bowl, stir the melted coconut oil, sugar and vanilla extract. Once combined, add the eggs one by one and stir again until just combined.
Add the first bowl to the second and stir until you can see no flour. Caution- don’t over do the mixing, I know we can all get carried away when it starts to feel like a mini arm workout.
Fold in the chocolate chips and pistachios, leaving some aside to sprinkle on top.
Pour the batter into the baking tray and spread out with a knife, sprinkle the remaining chocolate and the pistachios on top. Remember to sprinkle with LOVE.
Bake for 20 minutes or until slightly crispy on top. (Stick a toothpick down the center of the brownie to make sure it’s cooked. Leave to cool.

I hope you enjoy these Brownies just as much as you enjoy your day. I must say, I used to hate Valentines. I was totally sarcastic and bitter (probably because I was single) and hated every Valentines card and cliche gift, yet here I am dedicating a whole blog post to the bloody day. I’m not ashamed to say, I am totally and utterly in love with my man! (Jords, you better be reading this, because that part is dedicated to you!!)
